 | |  | In the autumn of 2002 Edwin van Westrop (1967) together with me, Natascha Hin (1969), opened his own restaurant.
Having first tasted the profession of chef in a number of famous establishments such as Tout Court, Hôtel de l'Europe, Kersentuin, Scholteshof, he went on to perform his task with great creativity as Master Chef at Bios in Alkmaar.
Innumerable wine and food tasting sessions have enabled Edwin to develop great skills in the game of wine and food combinations.
It is a joy to watch Edwin:
- carves up a sucking lamb - extracts a scallop from its shell with a rapid and expert twist of the knife, each time delighted at the freshness of the creature - inspires his team with his knowledge of products and innumerable preparation techniques - lovingly prepares his gravies and sauces
Finally, during dinner, when a day in the kitchen reaches peak activity, a well-directed film unfolds in which every player knows what is expected of him and before his dishes leave the kitchen Edwin puts the finishing touches to his creations with a spoonful of sauce.
I think I can unhesitatingly say that cooking is not only Edwin's profession but also his grand passion!
